****************** WINEMAKING OUTSIDE THE BOX Theresa Dilworth, owner and winemaker, has pioneered the use of Hungarian, Russian and Canadian oak barrels, in addition to the more classic French oak. In the barrel-fermented Russian Oak Chardonnay, the subtlety of Russian oak barrels lends just a hint of tannins and creaminess, balancing the acidity and fruitiness of the cool-climate chardonnay. The very first release of the Russian Oak Chardonnay, the 2002, won "BEST CHARDONNAY" in Dan's Papers "Best of the Best" in 2005, and the previous year, the winery won "BEST NEW WINERY". The Comtesse Thérèse Hungarian Oak Merlot, with a hint of spice, is another wine popular for twelve years since it was first released in 2001. Wine Enthusiast magazine, in December 2010, called the 2005 Hungarian Oak Merlot "a "surprisingly sexy, supple wine". See the links at left for more reviews. In 2004, the Hungarian Oak Merlot won "BEST MERLOT IN NEW YORK" at the statewide NY Wine and Food Classic, out of 54 merlots and 194 wineries across New York state. The excellent 2007 vintage saw the debut of the world's first-ever Comtesse Thérèse Canadian Oak Cabernet Sauvignon. The winery is the first on the east coast of the U.S. to use Canadian oak barrels. In 2010, the winery released its first 100% Cabernet Franc, from grapes grown by Reilly Cellars of Cutchogue. In 2010, the winery made its first meritage, a blend of 50% caabernet sauvignon, 25% merlot, and 25% cabernet franc, which will be bottled in fall of 2013. In October 2011, the vineyard's first malbec and syrah grapes were harvested. These grapes found their way into the 2011 Blanc de Noir. The 2011 vintage also marked the winery's first release of a stainless-steel fermented as opposed to a barrel-fermented chardonnay. The 2012 vintage will see our first red malbec.
